茶色素制取及其化学组成

摘要: 茶色素是茶叶中的水溶性有色物质或茶叶水提物经酶性 /非酶性氧化聚合而得的水溶性有色物质的总称,根据颜色可分为茶黄素、茶红素、茶褐素 3类。本文采用正交试验法对非酶性氧化制取茶色素工艺的关键影响因素进行了考察,并对产物的化学组成、分子量分布、抗氧化活性等进行了测定。

Abstract: Tea pigment is a water soluble colored substance, either contained in tea leaves, or derived from enzymatic/non enzymatic oxidative polymerization of tea extracts. According to their color, tea pigments can be classified into thearubigin, theaflavin and theabrowin. In this experiment, technological preparation of tea pigment from non enzymatic oxidation was carried out by adopting orthogonal test, to investigate the key technological factors. Chemical composition, molecular weight distribution and anti-oxidative activity of the product were also measured.
