Abstract: The physico-chemical properties and rheology of gum black wattle was studied.The results indicated that gum black wattle is consisted of weak acidic salt of complex polysaccharides containing cations Ca⁺⁺、Pb⁺⁺,etc.Solubility is slightly inferior to that of gum Arabic.The similarity on their physico chemical properties and rheology provides scientific basis for utilizing gum black wattle to replace gum Arabic.
