大花葵红色素理化特性研究

摘要: 对大花葵(Malva sylvestrisL.var.mauritiana Miller)色素的理化性质进行了研究。结果表明,大花葵色素属花青素类色素,溶于水,微溶于乙醇、三氯甲烷,不溶于苯、甲苯、乙醚、石油醚和二氯甲烷。pH值对色素影响很大,金属离子Na+、Cu2+、Fe3+、Zn2+对色素色泽有明显影响,而K+和Fe2+对色素无明显影响。自然光能加快色素分解,但受紫外光影响不大。

Abstract: Physico chemical properties of red pigment in flowers of mallow(Malva sylvestris L.var. mauritiana Miller were investigated.Results showed that the red pigment from M.sylvestris L.var. mauritiana Miller is classified to anthocyanins.The pigment is soluble in water, slightly soluble in alcohol and trichloromethane, and insoluble in benzene, toluene, ether, petroleum ether and dichloromethane.pH value had significant effect on the tone of pigment.Metallic ions Na+, Cu2+, Fe3+, Zn2+ had effect on the tone of pigment while K+ and Fe2+ had no effect on the tone of pigment.Under natural light, degradation of the pigment could be accelerated, while ultraviolet light had no effect on the pigment.
